i eat to live

You know how some people eat to live and some people live to eat.  Well I am the first one, which seems to be the less crowd pleasing option.  Don't get me wrong I have my favorite foods & I can throw down some food like you wouldn't believe but I don't LOVE food like some people.  I'm also very picky and get grossed out by certain textures and don't even get me started on tuna..... YUCK I don't know how you people eat that.  


So in turn cooking isn't one of my favorite things to do.  I can eat frozen pizza and mac & cheese (only the character ones cause they hold more cheese) for a week straight and be totally satisfied.  But I have a husband now & will have children in the future (and by future I mean not anytime soon) and I feel it's only the right thing to do to cook for him... I mean at least once a week.  My favorite day to cook is on Sunday so that's going to be my day to try a new meal!  This past Sunday I cooked "Easy French Onion Soup" found from my new Wolfgang Puck slow cooker recipe book!  Thank's Aunt Steph & Uncle Shane for the new slow cooker :)

The Ingredients
6 large onions sliced thin
3 TBL of olive oil
2 C. chicken broth
2 C. beef broth
1/3 C. Port
1 spring of thyme
1 bay leaf
8 slice of french bread
2 slices gruyer cheese

The Method
1. Toss the thinly sliced onion's and olive oil in the slow cooker.  Cover and cook on high for 9 hours.  At this time the onion will be beautifully caramelized. 




2. Add broths, port, thyme, and bay leaf.  Stir, cover, and cook on high for 15-30 minutes. 



3. Pre-heat oven to 400 F.
4. On a baking sheet toast french bread in the oven till golden brown, about 10 minutes.  Remove and set aside.
5. Ladle soup into individual soup crocks.  Top each soup with 1 piece of toasted bread and 1 slice of cheese.
6. Place crocks onto baking sheet and bake at 400F for 8-10 minutes or until the cheese is bubbly.

TA-DA!



So I mostly followed the recipe except I didn't have any port.  I only cooked the onions for 8 hours not 9 because I was getting hungry.  I toasted the bread while the cheese was melting on the soup!  Over all the soup was pretty good.  Big shocker-- it was REALLY oniony.  I felt like my whole body reeked of onion.  But it was very tasty! Whooo Hoooo recipe 1 for the year DOWN.

I'll share my pumpkin cake recipe tomorrow ;) oh was it delish!

  6. Awesome! I'm with you on the texture thing...some things are just so ick. You'll learn to love cooking. I used to hate it, but it's much more fun cooking for someone else!
