Tasty Tuesday: Salmon, garlic herb roasted new potatoes, & spinach

This was my FIRST time ever to cook Salmon.  I used my mother-in-laws recipe because she makes the most delicious salmon.period.



I used melted butter, salt, & fresh squeezed lemon juice for the rub (I don't feel like that's the right word for this but it's the only thing coming to my mind).  I brsuhed this mixture on while it was in the oven every ten minutes.  I wrapped the salmon in foil and cooked it at 350 for 35 minutes & I think I over cooked it by 5-10 minutes.  I was over all pretty impressed with it though! BONUS I was finally able to use my juicer. 

Side story: The day I wanted to cook this I realized I forgot to pick up lemon juice at the grocery store.  I DID NOT want to go the nasty Walmart nearby so I went to Forward Foods to search for some lemon juice.  Forward Food's is a small organic grocery store with uhhh pricey items.  Anyways I went in and asked the lady if they had any lemon juice... she checked and couldn't find any.  We then proceeded to have a conversation about what grocery store I could go to nearby to find lemon juice.  Then just as I was about to walk out the door she says..... wait will lemons work? Uh DOY! Yes they'll work.  Why didn't I think of that! 

Next: Garlic herb roasted new potatoes



1 1/2 pounds of new potatoes, quartered
2 tablespoons olive oil or vegetable oil
2 garlic cloves, minced
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon of pepper

Combine all the ingredients in a plastic bag; toss to coat. Pour into an
 ungreased pan and bake at 450 degrees for 35 minutes.

I LOVE this recipe :) yummy in my tummy.

I just addes a little olive oil, salt & pepper.

Isn't it A-mazing how it shrinks so much.

It was a delish & healthy dinner.  Besides the slightly over cooked salmon :)
