Tasty Tuesday: Salmon, garlic herb roasted new potatoes, & spinach

This was my FIRST time ever to cook Salmon.  I used my mother-in-laws recipe because she makes the most delicious salmon.period.



I used melted butter, salt, & fresh squeezed lemon juice for the rub (I don't feel like that's the right word for this but it's the only thing coming to my mind).  I brsuhed this mixture on while it was in the oven every ten minutes.  I wrapped the salmon in foil and cooked it at 350 for 35 minutes & I think I over cooked it by 5-10 minutes.  I was over all pretty impressed with it though! BONUS I was finally able to use my juicer. 

Side story: The day I wanted to cook this I realized I forgot to pick up lemon juice at the grocery store.  I DID NOT want to go the nasty Walmart nearby so I went to Forward Foods to search for some lemon juice.  Forward Food's is a small organic grocery store with uhhh pricey items.  Anyways I went in and asked the lady if they had any lemon juice... she checked and couldn't find any.  We then proceeded to have a conversation about what grocery store I could go to nearby to find lemon juice.  Then just as I was about to walk out the door she says..... wait will lemons work? Uh DOY! Yes they'll work.  Why didn't I think of that! 

Next: Garlic herb roasted new potatoes



1 1/2 pounds of new potatoes, quartered
2 tablespoons olive oil or vegetable oil
2 garlic cloves, minced
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon of pepper

Combine all the ingredients in a plastic bag; toss to coat. Pour into an
 ungreased pan and bake at 450 degrees for 35 minutes.

I LOVE this recipe :) yummy in my tummy.

Isn't it A-mazing how it shrinks so much.

It was a delish & healthy dinner.  Besides the slightly over cooked salmon :)

Smile Friday:Regatta SATURDAY

I am beyond thrilled because tomorrow is Mr. Sophisticate's first REGATTA!!!!! He rows with some fellow colleagues and for his company.  It's the corporate league regatta tomorrow and I can't stinking wait.  He has been practicing with his teammates every Thursday for last 2 months.  Don't worry I'll be taking pictures and video of this monumentous event. His father is coming in town for the weekend to bring us our dining room table, chairs, & hutch we purchased over memorial weekend in Dallas at Nadeau, help hubby work on the house and yard, AND watch his first regatta! His mamma would normally be coming with but she is visiting his sister for the weekend in Nashville (little jealous I missed that trip, but couldn't miss hubby's first race). I am blessed with some AMAZING in-laws, I mean seriously.

bird wedding


My good friends Kimberly & Jay got engaged on our wedding weekend and we could not have been MORE thrilled.  See.... hubby & I got engaged after our good friends wedding the year before.... so we were thrilled the legend could continue! 


Kimberly & Jay could not be anymore perfect for one another.  They compliment each other SO WELL. Kimberly & I grew up together in Arkansas....... and Jay and the hubby have become great "wedding" friends.  We go to a lot of weddings & well they (hubby & Jay) hit it off from the very first wedding. Jay is so genuine and kind.  Kimberly is so sweet, creative, giving, and loyal. They are to say the least a great combo. 


They were "set free" over memorial weekend in a beautiful wedding that was SO THEM! Here are some bridal pics & pics from the wedding.
